There are few pleasures greater in life than starting the morning with an iced latte from Larchmont Avenue-based cafe Go Get ‘Em Tiger (plus, a little positive affirmation first thing doesn't hurt, either). Sidling up to their stand-up bar has become one of our favorite weekend traditions. 

It’s no surprise then that the New York Times lauded Go Get ‘Em Tiger’s cold brew, calling it the Best Iced Latte in America. What sets their coffee apart from any ordinary cup of joe is their sweet, creamy almond macadamia nut milk. If you find yourself in Los Angeles, stop by one of their two locations (the other is called G&B in Downtown's Grand Central Market).

And, if you don’t have any vacation plans to come to L.A., I've asked Go Get ‘Em Tiger owners Charles Babinski and Kyle Glanville to take me step-by-step through their process so that you can make this magic nut milk in your own kitchen. 

According to Charles and Kyle, "macadamias have a neutral fattiness and richness that works really well with coffee. Nut milks can be great on their own, but not work great with coffee – often times the coffee flavor will cut right through it. The macadamia's richness is more similar to the harmonious richness that whole milk brings to, say, a cappuccino. And, macadamias are also just really tasty.

Ingredients: Almonds, Macadamias, Dates, Water

We do 1-part nuts to 5-parts water and .15 parts date. The nuts are 3/4 almond and 1/4 macadamia. So for roughly a liter of milk...

50g macadamia 

150g almond

30g dates 

1l of water 

Some folks add things like vanilla, sea salt, cinnamon, or coconut water but we at GGET keep it simple. 

Blend the ingredients and then pour the contents into a hop bag and drain over a large bowl or container. We prop a strainer on top of our container so that the bag can rest in it if need be (otherwise you are holding a bag the whole time you are squeezing out the milk). Avoid cheesecloth because it will stretch. There are also nut milk bags, but hop bags are a more affordable option.

Chill it right away. The milk will generally last a few days in the fridge, but the quicker you can get it cold, the better. You can dehydrate the pulp into almond-macadamia flour and use it for baking. Personally, we’re fans of using coconut, honey and chocolate to make macaroons."
